Preparing chicken
  1. Prepare marinade bath for the chicken. A sealable plastic bag is great for this. Put sugar and white wine in.
  2. Massage the chicken tenderly to help sugar and white wine diffuse into the chicken. A slightly high PH of white wine and sugar does a very good job in making chicken tender and juicy inside. Hydrogen ions can act like little Ninja.
  3. Keep the chicken in the marinate for 4 to 5 hours or more. Give a gentle massage to the chicken every hour or so.
  4. If you use the chicken for Western style cooking, you can add about 1 tbp of olive oil to the marinate.
