Fried Beed
  1. Chop the garlic coarsely.
  2. Cut the green peppers into long slices.
  3. Back in Japan, I used to cut them into very thin slices as I used very thinly sliced beef. But here in Canada, beef usually comes in a big chunk, so I’m adjusting the cutting style.
  4. Slice the Eringi mushrooms.
  5. Heat a fry pan on high. Add sesame oil. Before the oil burns, throw garlic in first and then the beef.
  6. Sprinkle a tiny pinch of salt on the beef to extract Umami from it. Pepper the beef for flavour.
  7. When the color of the beef changes, throw the green peppers and mushrooms in.
  8. Make sure that the oil is well mixed with all the ingredients.
  9. Again sprinkle a pinch of salt. Pepper them all.
  10. Pour sake in.
  11. Turn the heat down a little.
  12. Wait for about a minute, and pour the oyster sauce in.
  13. Pour in the starch mixed with water for consistency.
